5w-30 or 5w-40 is what is recommended by VW for use in your Beetle. If it's the 1.9L Diesel, use 5w-40 Diesel oil. Regular oil doesn't have the added detergents etc that this diesel brand does.

There are two ways. All Volkswagen four-cylinder engines have the same bolt locations, flywheel diameter and so on, so theoretically the process is to remove the gasoline engine and put the diesel in its place. You'd also have to change all the engine control electronics, the exhaust system, and anything else that differed between gas and diesel engine cars. The more advisable way would be to trade your car in on a diesel Beetle.

It depends on the year of the beetle. If I remember correctly 1999-2004 engines have the 1.8 Turbo. Those same years also have 2.0L Non turbo, and the 1.9L Turbo Diesel. I believe after 2005 they stop making the turbo beetle completely and give them a 2.5 L engine. The other models of the VW brand still come turbo, just not the Beetle.
