Huh?

Temperature is temperature! If the recipe calls for 325 degrees, it's the same if

you're cooking with electricity, gas or over an open fire in a dutch oven.

FriPilot This answer is absolutely NOT correct! For instance, convection ovens are more efficient than conventional (or dutch or open fire) because the moving air circulates the colder air around the food and heats the food faster. You should experiment with your own recipes, but you can generally bake at 25 degrees less when using a conventional oven because of its greater efficiency and heat distribution. It also allows baked goods to generally have a better consistency and texture since higher temperatures more easily dry out foods.

I stand by my answer. The poster asked about the temp. difference between gas and electric ovens, not between conventional and convection ovens

Yes, gas ovens and electric ovens must both be adjusted in temperature, depending on what you're cooking. Electric ovens have a dial that adjusts the temperature. Temperature adjustments are made either in degrees Fahrenheit or degrees Celsius. Gas ovens also have a dial that adjusts the temperature however temperature adjustments are made in 'marks' (i.e. mark 1 or mark 2).

It's a matter of personal opinion ... Gas is used more in institutional kitchens as it is cheaper than electricity. Electric ovens are used in places where venting to the outside is either impossible or impractical. Still a matter of personal preference - kinda like asking someone if a Ford or Chevy is better ... personal preference.

Each type of oven has its strengths and weaknesses, with neither gas or electric being necessarily better than the other. A gas oven will cost less to run if you use it quite a bit for things like baking, it heats up and cools down faster, and will control the heat to a more exact temperature. On the other hand, an electric oven distributes the heat much better than a gas oven and uses more dry heat which keeps away the rust.

Why is it important to preheat cooking equipment before cooking?

You should always preheat equipment such as ovens and fryers so that they are cooking at the correct temperature when the food is placed in it. This will ensure proper even cooking of the food. If you are using an electric stove, you may want to preheat your pans because it takes so long for electric heating elements to come to temperature, compared to gas burners. If your recipe says to cooks at medium for 15 minutes, you won't be at "medium" on an electric stove for several of those 15 minutes unless you preheat.
