Baking powder is used in baking as a "raising" agent to puff up the pastry, muffin, cookie or bread. It consists of baking soda, corn starch and an acid (often tartar) to activate the soda. You can eliminate the baking powder by substituting baking soda, but then you must add an acid such as vinegar, tartar, lemon juice or a Vitamin C tablet (ascorbic acid) to activate the soda. Remember to add the acid last (just before placing in the oven) or the soda will fizz away to no effect.
