It is low in fat, high in dietary fiber, folate, water and vitamin C, possessing a very high nutritional density. It also contains several phytochemicals which are beneficial to human health, including sulforaphane, an anti-cancer compound released when cauliflower is chopped or chewed.

Boiling reduces the levels of anti-cancer compounds, with losses of 20-30% after five minutes, 40-50% after ten minutes, and 75% after thirty minutes. However, other preparation methods such as steaming, microwaving, and stir frying had no significant effect on the compounds.

Cauliflower is a source of indole-3 carbinol, a chemical which boosts DNA repair in cells and appears to block the growth of cancer cells. The compound also appears to work as an anti-estrogen, appearing to slow or prevent the growth of tumors of the breast and prostate.

Cauliflower also contains other glucosinolates besides sulfurophane, substances which may improve the liver's ability to detoxify carcinogenic substances.

A high intake of cauliflower has been found to reduce the risk of aggressive prostate cancer. Cauliflower is also a good source of carotenoids.

Cabbage is most notable as a cancer fighter. In the journal Nutrition and Cancer, a study called Cruciferous Vegetables and Cancer Prevention notes that isothiocyanates and indole-3-carbinol compounds present in cabbage are notable for their anticancer properties. The authors point out more generally that, "Results clearly point toward a positive correlation between cancer prevention of many target organs and consumption of cruciferous vegetable or their active constituents." These compounds are anti-inflammatory, as well as natural detoxifiers.

Cabbage is also rich in vitamin K, vitamin C, and vitamin A. These are all natural antioxidants, which help suppress cancer and Heart disease inducing free radicals. Vitamin C is especially important, as it is water soluble and cannot be stored in the body. Daily replenishment is essential.

It's long been known that cabbage greatly benefits the stomach, repairing potential ulcers. The various phytonutrients and antioxidants present in cabbage also maintain overall stomach lining and intestinal health, cleansing the body of bacteria build up.

The fiber in cabbage is also a proven cholesterol reducer.
