Chocolate if it is melted or solid is still chocolate. If it is melted you can cool it down and make it solid. Think. How else would chocolate Easter Bunnies or Santa's get made? They are melted chocolate into the forms and allowed to cool into the shapes.

In simple terms, it melts. The particles inside the solid chocolate are caused to vibrate more due to increased heat. The particles vibrate and jumble up, losing their uniform pattern of the solid chocolate. The solid chocolate has become a liquid and the particles can now flow and move freely around each other but they are still touching each other too.
