Coffee is a plant product, not a chemical alkaloid. It contains caffeine, which is an alkaloid. Coffee is slightly acidic, but not as acidic as soda, beer, etc.

Probably acidic, neutral, and basic. A neutral pH is 7, and anything below that to zero is acidic. Anything above that to 14 is basic. I thought that 14 was alkaline...??
If you can get your hand on litmus paper or universal indicator, that's the easiest. If you're a chemist, you have far more things that can tell you the pH. It may be easiest to dissolve soda ash in water first. Then add this incrementally to the acidic water, all the while checking the pH upon addition

The alkaloid reaction is greatest because the sodium by carbonate reactect with the acidic property's of the caffeine… but if you boil it down it makes a crack cokaine substance :)
Because the chemical that works in the stomach- pepsin (a chemical that breaks down proteins) only works in acidic conditions, which is low pH. Hope that helps
