Cheese fondue is not typically made with havarti, usually one uses emental or gruyere, however, if you like havarti, then why not. It might be a good idea to mix it with some kind of Swiss cheese for the sake of consistency.
Also, if you use havarti be sure not to add salt, as it is a rather salty cheese.
There are several good choices... The traditional fondue is half Gruyère and half Vacherin.

Raclette is generally cooked in a little oven on tables in Switzerland, it consists of cheese and sliced cooked potato. You out the potato and cheese on a little tray and slide it into the oven to melt the cheese, you can top it off with gherkin's, onions, paprika etc. A fondue is made in a fondue pot and you spear chunks of bread and dip it into the fondue pot of melted cheese. You can have meat and fish and sweet fondues as well.
