Conventional wisdom would tell you "no". However, I've been doing this all my life with no problems so far. Reheat the soup until piping hot before eating. Be more cautious if the soup contains meat or fish.

That depends what you mean by several hours. Potentially hazardous food should not be left at room temperature for more than 2 hours, at which point it should be reheated or refrigerated. Of course, the less time at room temperature, the better.

If you are in doubt of the broth's safety, do not use it.

Can you leave a ham hock out overnight and still use it in your soup?

although you are proabably cooking it to the full safe temperature zone, i would not recommend using it in your soup after being left out overnight, it contains meat and unless you would normally eat meat that has been left out over night it probably isn't a good idea.A diffferent answer:Ham, by definition, is cured meat, and as such is less vulnerable to spoilage than uncured meats. To be safe, though, a ham hock left unrefrigerated overnight should be thoroughly cooked before eaten.
