Excess steam can almost always be used to produce extra energy. If the steam is run through a steam turbine, you can efficiently produce large amounts of energy. This is how a steam turbine works: hot steam is run through a turbine, after it goes through the turbine it is ran through a condenser which turns the steam back into liquid water. As the steam is condensed (going from a high pressure and energetic gas into a liquid) there is a decrease in pressure in the condenser. Thus, the high pressure steam flows fast through the turbine and into the low pressure condenser. This system is perpetuated by a steady supply of steam and a steady supply of something cold (river water etc) to cool down the steam in the condenser.
