Dinner can definitely be countable-- "a dinner" refers to a special meal that one eats during a formal event: I attended a formal dinner with the governor last night. The president has three holiday dinners scheduled this month.

But it can also be part of the expression "to have dinner"-- in which case, it is not countable: She had dinner with her sister yesterday. (Some people use the word "eat" instead of "have," but the rule is the same-- in this expression, 'dinner' is not countable. I will eat dinner at home tonight.)
