Water. The water in a popcorn kernel heats up turning into steam, the steam causes pressure that bursts through the hull of the kernel.

Answer:

The physics of popcorn popping are quite interesting. In any popcorn popper you use (stove top, microwave or hot air) it works the same way:

  • The popcorn kernel is a tough coated seed with a damp internal core of starchy material
  • As it is heated the water in the inner part would like to boil but the pressure and containment of the kernel's coat prevents it from doing so.
  • Eventually the pressure on the inside gets high enough to rupture the tough coat
  • The sudden release of pressure lets the water that was way over boiling point suddenly flash into steam (and taking up a lot more volume in the process)
  • This expanding steam froths up the starch into the white popped corn then evaporates into the air

first there are popcorn kernels. Each of them have moisture inside, so when heated the moisture evaporates. The extra mass from the steam caused the shell of the kernel to brake or pop.

You get a bag open it up put it in the microwave set it to about 300-450 degrees and set it for about 2 minutes or a little less and then start. then open by the sides safely so you don't get burnt and then you have fresh popcorn.
It has to do with the water inside the kernel and as it heats up, the little drop of water expands creating more and more pressure on the kernel until the water turns into steam creating the soft popcorn, instead of the hard kernel, then the pressure makes it pop.

It is best to put kernels in a bag (safeway brand are pretty good) and keep in the freezer, then pop over the stove in a large pot (soup pots are good) with canola oil in the bottom of the pot.
