If you make copies you will have everythin in the Library, but you will use twice as much disk space.(You can change this to suit you.)2. Add music by dragging the music to the iTunes Dock icon.3. If you have music on a CD set the iTunes prefs to copythe music to the library when you insert a CD. Then when you eject the CD you still have the songs. Set the prefs back to notcopy music to the Library.4. You can also add music with the iTunes menu "Add to Library"

What you are doing is 'syncing', and every time you sync your iPod, it will back it up. If you do not want to back up your iPod, highlight the music from your library that you want to put on the iPod and just drag it onto the iPod Touch menu.
you can do this 1 of 2 ways. the first way is to connect your touch to itunes and click on your itouch. scroll towards the bottom and click "Manage music and vids manually" the click on music under your itouch and delete anything you like the second way is to go to music on your itouch and go to the song you wanna delete slide your finger across the screen and a red delete button should pop up
