Red velvet cake is really just under-chocolified (is that a word? It should be LOL!) chocolate cake with a couple of tablespoons of red food-grade dye. Stool discoloration shouldn't even be a concern for you as long as you didn't eat excessive amounts of red velvet cake (like the entire cake or close to it), or didn't directly ingest those couple tablespoons of red food-grade dye. If you consumed just one serving and you have no digestion/elimination issues, the color will get broken down in the digestion process and the discoloration (if any) probably won't even be noticeable. If, for whatever reason, you HAVE eaten an extraordinary amount of red velvet cake/food color, your stool might turn anywhere from slight red to rust, but that in and of itself is no cause for alarm. If you did eat too much rvc, it'll probably discolor your next 1-2 "batches" provided you ate it at one sitting or within a close time frame of one day. This depends also on your regularity. If you're digestion/elimination is sluggish or infrequent (if you don't digest your food efficiently and/or you excrete every other day instead of once or more a day), then the color will be more pronounced and it will definitely take longer to completely eliminate. I see no reason for concern.
