White doves stand for the Holy Ghost Of Christ.

A few more interpretations

The symbolism of doves varies with who sees them. To Christians a white dove is the symbol of the Holy Ghost (Spirit), White doves adorn the tops of some wedding cakes as a symbol of love, a the Romany say if a newly married couple see a pair of cooing doves it is the sign of a long and happy marriage. A dove with an olive branch is a symbol of peace the world over.

I have seen doves interpreted variously as love, peace, gentleness, marriage, a general all round good omen, depending on where they are seen.

The dove is mainly a symbol of love and peace. It associates with Jesus and Christianity. The dove was a messenger of God. Going back to the book of Noahs ark in The Bible, God informs Noah that there is going to be a flood and he then makes an ark. Once God flooded the earth, Noah sent a dove and a raven to find any symbol of life. The dove came back a few days later with an olive tree branch. Therefore, they are also a symbol of new beginnings and a new start.

Doves symbolize peace, love, innocence, and purity. Two doves can sometimes be used to symbolize a partnership of those things, but is not necessary. A dove can also represent the Holy Spirit, after the Dove carrying the olive branch to Noah on the Ark, telling him the flood had ended.
