Evaporation only occurs from a surface, and is a stochastic process that occurs when a molecule gains sufficient energy to escape the surface tension. i.e. it is the hotter of the molecules that escape - which is why evaporative cooling occurs of the remaining liquid.

Depending on the pressure and temperature of the material, evaporation may occur from a liquid, or a solid.

Water and alcohol are examples of the first, and water, and Dry Ice - (CO2) are examples of the second type of evaporation, and which is given the special name of sublimation.
