Was told engine warning light was too sensative but ok to drive the engine coolant tank was empty and now the engine has siezed up if light was working properly would i have seen this?

It's connected to the coolant tank. Mine was worked on by a previous owner, and isn't working, so the coolant warning is always on. Look for a wire coming from the tank.

Then coolant doesn't flow through the engine block, and your motor is allowed to build up heat. If your thermostat works properly, it'll open up when the specified temperature is set, and coolant will flow in.
