In general this process for separating atomic materials is called Electrolysis. Specifically pertaining to water, this process is known as Hydrolysis - 'lysis' is Latin for splitting.

If you use a chemical reaction to split water, then it is often called oxidation or reduction depending on the process. The splitting of water itself doesn't have a name, only the processes that are used to do it.

How do you separate H2O?
The process by which water is split into H2 and O2 atoms is called electrolysis. A DC electric current is passed through the water which splits the H2O molecules into these respective atoms. add. But all plants do this by the process of photosynthesis, whereby they split the O from the H. The H they use in constructing complex molecules, and the O they discharge as waste.
