No Frills Cooked Beet Greens
Ingredients:
Beet Greens (cut off the heavy stems)
Butter
Salt
Pepper
Procedure:
- Wash beet greens in a sink filled with cold water.
- Remove to a colander and drain. No need to worry about draining thoroughly - you need the greens to be wet for cooking.
- Place beet greens in a large pot. Do not add additional water. The wet leaves will provide enough moisture.
- Cover and cook over medium heat until greens are wilted, about 3 to 5 minutes. Do not over-cook.
- Serve with butter, salt and pepper.
