The term fatty acid is misleading because it refers to both Fats and Oils.

Fats come from animals and are solid at room temperature [because they contain more straight-leg or saturated fatty-acids], while oils come from plants and are liquid at room temperature. Both possess an acid / polar end [head] and an uncharged / nonpolar tail.
