Vitamin K1 (phylloquinone or phytonadione) is a natural nutrient found in green leafy vegetables.

Vitamin K2 (menaquinones or MKs) in foods are mostly in the form of MK4 and MK7. You can convert vitamin K1 directly into MK4 within certain tissues in your body, and as long as you are getting enough vitamin K1, you are likely to be getting enough vitamin K2 (MK4 type). MK7 is a natural product of bacteria that live in your lower intestine. MK7 is also found in large amounts in the fermented Japanese soy product known as natto.

One cup of chopped, cooked broccoli has 220 mcg of Vitamin K.

One cup of raw, chopped kale has 437 mcg of Vitamin K.

One cup of raw spinach has 145 mcg of Vitamin K.

From research I've done for the past few months (I was put on Coumadin and preferred to avoid Vitamin K altogether), I only know of these K-free veggies: mushrooms, corn, canned beets, bamboo sprouts and fennel (which is more of a spice, really). The rest of vegetables have Vitamin K, though some have such a low amount it almost doesn't count (like turnips or seaweed).

They are dark leafy greens (collards, mustard, turnip, kale), spring onions/scallions, asparagus, broccoli, and brussel sprouts. For the record, vitamin K is an essential vitamin required for protein modification and blood clotting.

Dried and fresh herbs are the foods highest in vitamin K, with Basil, Sage, and Thyme containing the most. Other good choices are Scallions, Brussels Sprouts and Broccoli.
