Joints that allow movement in a single plane are called trochlear joints, also known as hinge joints. Examples of such joints are the knee and the humero-ulnar joint of the elbow. Technically the knee does rotate slightly in the last few degrees of extension which is called the "screw home mechanism", but is still considered a hinge joint.

Why do hinge joints move in one direction?

Because they are joints that hinge. A hinge can only go one direction. Like for example, a door hinges, and it can only go one direction unless you break the door. Then the door could go anywhere, but hinges only move one direction.
