Generally they were wool. There was a form of velvet but cotton wasn't in use as a fabric yet. It will take several hundred years before that will happen. Silk was used and brocade. Lots of fur was also added to garments, but the laws regulated what colors, jewels and decorations could be on worn. Nobility were the only ones who could wear certain colors and jewels. Some medieval dresses were made from silk, fur,cotton,hemp,linen leather etc..Various fabrics, such as taffeta, velvet and damask, were made from textiles like silk, cotton and linen using specific weaving techniques.

Women wore long gowns with sleeveless tunics and wimples to cover their hair. Men wore stockings or tunics. Sheepskin cloaks and woolen hats, mittens were worn in winter. Leather boots. Most people wore woolen clothing with linen undergarments. The brighter colors and better materials with a longer jacket showed wealth. Holy orders wore long woolen habits that copied Roman clothing.
