Plate boundaries separate the tectonic plates from each other. They are the place where the lithosphere is converging (subduction/consumption of material) diverging (creating new material - sea floor spreading) or being "conserved". The plate boundaries are where all the action happens - volcanoes, mountain building, earthquakes, subduction, sea floor spreading at mid-ocean ridges, etc. Without plate boundaries there would be no distinction between the plates, and we probably would have had a harder time putting the geologic pieces of the puzzle back together.
