What country first made corned beef?
Corned beef was first made in Ireland. The appearance of corned beef in Irish cuisine dates to the 12th century in the poem Aislinge Meic Con Glinne or The Vision of MacConglinne . But it would have been a little different to todays. The translation to english doesn't cross to well but it is called dry meat which would have been salted . How long can you freeze cooked corn beef and cabbage?
The first item, corned beef is such a lovely joint, the brisket, does contain a good % of water. Once the corned beef is sliced and/or cut down to whatever your desired cut, you can freeze and keep it in the freezer no longer than 6 months. Consequently, once you thaw whatever kind of pickled brisket, corned beef, pastrami, or Montreal meat is going to weep water to good extent, as a direct result from simply freezing it. If you've got a corned beef & cabbage casserole made, it will keep in the freezer. Just be aware that once this type of meat has been pickled in brine, it now has all of it's pores filled with water. You may have to press moisture from the meat alone, combined with cabbage, it will keep. If this is the case, who knows, the excess moisture may lend itself in some form of a broth. Be very aware of your salt levels, when I cure some meat, like fish for example, the first main ingredients are salt and sugar, then additions that are irrelevant to your question.Please remember though, corned beef is the result of being pickled in a BRINE which is saltwater.

What type of wine goes with corned beef and cabbage?
It's called beer. (And I'm a wine snob.) A dark one, like a porter or stout, is especially good. If your corned beef was braised in beer, well, then no other beverage but beer will do. However, if you MUST drink wine, then a Beaujolais or Beaujolais Village is okay. If you don't like reds, then an off-dry Riesling might do the trick.

How long can you keep corned beef?
There are no hard and fast rules about the length of time corned beef will keep. That will depend upon several factors including # the recipe/formulation # the packaging used # the handling of the corned beef from production through distribution to the store and by the consumer # the actual conditions of storage - especially temperature and temperature fluctuations Most of the information we have available are just guidelines. So use those and a bit of good sense. If the package is unopened and your refrigeration is 40°F or less (check with a thermometer), use the manufacturer's date on the package. If it is opened, plan to use it within 5-7 days. If it is frozen, plan to use it within one month.
