Homogeneous Mixtures = of one or more substances (the solutes) dissolved in another substance (the solvent).

Heterogeneous Mixture = mixtures with inconsistent, non-uniform composition. The parts of a heterogeneous composition can be mechanically separated from each other.

The two types of mixtures in chemistry have to do with it's composition. The first is Heterogeneous, which is variable composition within the mixture. An example of a heterogeneous mixture is vegetable soup; the first sample will contain different parts (like carrots and green beans) than the second sample, so the first sample does not represent the entire mixture.

The second type of mixture is a Homogeneous mixture. Homogeneous has similar composition throughout the sample. Every sample will be the same as the next, so the whole mixture can be represented by one sample. An example of this is homogenized milk, in which they mix the cream in with the actual milk, so that all the milk is the same. Another name for a homogeneous mixture is a solution (for information on that look in the Related Questions below).

Inversely, in fresh (and by fresh I mean from the cow) milk, the cream separates from the milk, so that is a heterogeneous mixture.
