The epithelium of the small intestine in the villi is only ONE CELL THICK - for easier diffusion of the products of digestion into the bloodstream. The walls of the capillaries are only one cell thick as well!!

No digestion occurs in the gallbladder, but the gall bladder can produce a greenish liquid called gall/bile, and that gall/bile flows into your small intestine to help digest food there. To be more specific, bile salts aid in the digestion of fats in the small intestine.
By the end of the small intestine, the nutrients have been digested from the food. What remains is waste. The large intestine absorbs excess water and a few vitamins from this waste, and then passes it out of the body via the rectum.
