Using fresh ingredients helps the quality and over all taste of the dish. For example if your making a salad and you use old lettuce the salad wont have the same great taste that a salad with fresh lettuce will have

In general, fresh food is a good thing, not a disadvantage. One might argue that there are some foods that improve with age, which includes wine, cheese, and balsamic vinegar. But that is only relevant to gourmet dining. And even gourmets usually want their food to be fresh.

There are many benefits to this. I am no expert in Biology, but by using a fresh specimen you are able to see in more detail. For example, if you were to look at a leaf which had just been cut off of a plant then you would be able to see in much more detail what it was like when it was actually alive than if you looked at a dead and wilting leaf. The colors and textures in a fresh specimen are much better. They are easier to work with as when they die they become dry.
