If you are eating the skin with your baked potato, then you are
getting a great source of carbohydrates (starch), fiber and vitamin
C. Potatoes are a wonderful staple that can be a part of a healthy
meal -- as long as you continue to add a variety of foods to your
diet. So, the effect is that baked potatoes contribute needed
nutrients to a healthy meal plan. However, if you are not eating a
variety and allowing most of your calories to come from potatoes,
then you will be short of many other nutrients you need for
survival. The effect would be to become malnourished or short of
nutrients you need for survival.
