There are plenty of options. Some simple ones are soup, salad, cereal, rice and beans, or veggie stir-fry. Of course, there are always nuts and seeds for flavor / snacking and fruits for a sweet dessert. Many companies make tons of vegetarian foods (usually out of soy), so you can have a veggie burger, tofu nuggets (they're so good!), and depending on the kind of vegetarian you are - eggs (omlette), milk, cheese, or fish. The staple in a vegetarian diet is Pizza!

It is best to eat regular meals at roughly the same time each day. Try not to eat too many carbs late in the evening as carbs (pasta, rice, breads, potatoes, chips) are an energy source and you will unlikely burn it off after eating an evening meal therefore it will be more susceptible to being stored as fat.

A good evening meal would consist of some protein (meat or fish) and vegetables. A small side serving of carbs is ok but make the protein and vegetable content the main focus of the meal.

My dinners are varied and consist of a roast dinner (once a week), hotpots and stews in winter, barbecued food in summer, salads, steamed veg, tuna loin steak with ratatouille, chilli con carne, curries and lasagne's. Home made is best none of the ready meals or convenience foods (full of sugars and additives). Make large amounts and freeze some.

Try to eat seasonal foods and limit red meats to once or twice a week.

Lean Meat

Examples of lean meat include fish, chicken, turkey, pork, tofu, eggs, nuts and seeds. It is important to choose lower fat meats to avoid gaining weight, raising cholesterol, and the risks of Heart disease which are raised as a diabetic.

Carbohydrates

Examples of carbohydrates include pasta, rice, tortillas, bread or rolls. Some healthy non-bread items like potatoes or beans also have carbohydrates. Choose complex carbohydrates whenever possible, including wheat bread or brown rice and items higher in fiber. These will help you stay full longer and process easier in the body.

Vegetables

This mainly refers to green and non-starchy vegetables. Some vegetables also have carbohydrates such as tomatoes, peas, carrots, and squash. While the fiber in these vegetables makes them easier to process than other carbohydrates, it is good to be aware of their effect on blood sugar.

Fruit

It is best to avoid fruit juice or canned or dried fruit and to stick with fresh or frozen fruit instead. These types of fruit can have concentrated amounts of fructose, or fruit sugars, that adversely affect blood sugar. A small piece of fruit or half cup of berries will be more filling and reduce sugar spikes.

Dessert

Dessert can still be part of the meal if it is done in moderation. Swap out the milk, fruit, or carbohydrate for a large cookie, 1/8 of a piece of pie, or 1/2 cup of ice cream.
