Other materials may not release volatile molecules or may release them in such small quantities that they are not detectable by our sense of smell.

The sense of taste and smell is proper of animals and human beings. Chemical substances and other physical elements also release odours that we detect through our nose and certain receptors in our brain. In fact, smell is a physical property, however I think that some chemical process occur in the brain in order to catch the smell.
Breathing through your nose causes you to smell it, and if you hate it you wouldn't want to smell it. If you breathed through your mouth, you are less likely to smell it and strangely, taste it!
You can see microorganisms through a microscope, but you cannot smell or taste them.
