Dining etiquette. If you need to call a waiter in a restaurant, raise your hand subtly, catch his eye, and softly say senor or mozo (for a waiter, specifically). Contrary to the Colombian custom, you probably will not be invited into an Ecuadorian home for dinner, at least at first, but you will likely be invited into their home for a party; parties start very late, around 10 P.M., with people often not arriving until 11 P.M., and they go till and past dawn. A party is a Saturday night event, exclusively. The meal, if there is one, is usually breakfast, just before people leave after dawn has broken. The idea is to drink, dance, and have fun; have your dinner before you set out for the party because the only food there will typically be snacks and appetizers.
