While persians do have flat faces their eyes are not truly bigger than any other breed of cat.
The cat with the big eyes and flat face is called an Exotic. They are expected to follow the breeding standard of the Persian but have distinct differences.
That particular coloration pattern ... light overall, dark on the extremities, like the tail and ears and (sometimes) paws, and also usually on the face... is called "pointed", and it's mainly associated with Siamese cats and breeds derived from them.
That doesn't mean your cat is a pure-bred Siamese, it just means it's likely that it has some Siamese in its ancestry.
The only cat I know of that fits this description is the Persian.
The manx cat has no tail, but not sure about the fur and ears. You sure tail not been docked?

The smaller the ear the less heat lost and having it round is an disadvantage as it is not streamline and an easier target in a fight
A rabbit with small ears has small ears and a rabbit with big ears has big ears.
A rabbit with short ears would be a netherland dwarf (smallest breed of rabbit you can get also has tiny ears) however im unsure of the colouring as all rabbits can have different colours of fur and so it doesnt help to identfiy a rabbits breed

Your cat is most likely just a mixed breed like all of ours, but she might be part Siamese, considering the black tail/ears and angular head.

Any breed could have four ears. But it would have to be a rare genetic mutation in the DNA. It is really rare though.
