- 20 golden round crackers, crushed
- 1/2 cup grated Parmesan or cheddar cheese
- 1/3 cup fresh parsley sprigs, minced
- 1/4 cup melted butter or margarine
- 4 catfish fillets
Mix first 3 ingredients in a bowl. Brush butter on fillets; coat each fillet with the cracker mixture. Place on foil-lined baking tray. Bake at 400°F for 15-20 minutes, or until fish flakes easily with a fork.
Per serving: calories 427, fat 27.5g, 59% calories from fat, cholesterol 130mg, protein 32.2g, carbohydrates 11.5g, fiber 0.6g, sugar 0.7g, sodium 484mg, diet points 11.2.

Combine all ingredients in a bowl. Divide into six well-greased muffin cups. Bake at 450°F for 10-15 minutes, or until done.

Keep in mind that studies have shown that microwaves ovens reduce the nutritional value of food.
