You can mix white granulated sugar with molasses.

In fact, brown sugar is just a mixture of white sugar and molasses. I use 1 part molasses to 6-8 parts sugar. (Usually I add them to recipes separately, but sometimes I premix my brown sugar--you should probably do this to figure out what proportions you prefer.)

Many things, depending on your needs.

If your health is generally good, you can use whole, unrefined sweeteners such as unrefined sugar (e.g. Rapadura), molasses, raw honey, brown rice syrup.

Agave nectar is a good option if you're going to be consuming the sweetener regularly, as it has a low glycemic index.

If you're even more concerned about blood sugar levels, whole stevia leaf is a great option.

You should be able to buy stevia in a health food store and some grocery stores. You should look for it in the tea section not the sugar section.

For each cup of brown sugar just substitute one cup of granulated sugar plus 2 tbsp molasses or dark corn syrup.

If you don't have either molasses or corn syrup your cookies will still turn out fine with the white sugar.
