The design of the motte and bailey castle changed due to the strategies of attack improving and developing. for e.g. burning the castles down became a vast attack strategy and this led to the design changing to square keep castles, which where made of stone.
The Normans were the first to start building the motte and baileys they probably used them in Normandy in France and used them when they invaded England

they were attacked by soldiers setting the motte and Bailey castles alight and the castles also had pickaxes through at the door because in a matter of time the pickaxes would make a hole in the door and they could get through.
well the reason for the square castle to be built was that the Motte and Bailey castle were made out of wood so when it starts raining it will rot and also when fights start, fire was the best way to attack the Motte and Bailey castles since they were made entirely out of wood. The fire might be started by building a bonfire against the outer wooden fence (or, more usually, by archers shooting fire-arrows into the castle. As the fire spread through the castle those living inside would be forced to leave allowing the attackers to take them prisoner or kill them. This was one of the reasons why Motte and Bailey castles were soon replaced by Stone Keep castles. Fire has little effect on a stone castle.I hope it helped u
Motte and Bailey castles were built out of wood because it was cheap to buy, light to carry and could be built really quickly and with ease. A motte and bailey castle would have been built in a matter of weeks. Also it meant the motte would not collapse

Kings and nobles built castles to protect themselves. The Normans built the first castles. After winning the Battle of Hastings, the Normans needed to protect themselves and their new kingdom. They quickly started to build wooden Motte and Bailey castles. The term motte and bailey comes from Norman French words that mean mound and enclosed land. A motte and bailey castle was built on a huge mound (motte). Mottes could range from 25 feet (8 metres) to over 80 feet (24 metres) tall. The sides were so steep that it would have been difficult to run up them. For additional protection, a deep ditch was dug around the bottom of the motte. The bailey was situated at the bottom of the motte/mound. Baileys varied in size. They could be anything from one to three acres. The followers of the lord of the castle, lived inside the bailey. Inside the bailey were storehouses, stables, bakery, kitchens, and houses and quarters for the followers and solders. They were made of timber, vulnerable to fire, and by that could be destroyed when under attack. Permanent stone Norman castles eventually replaced them.
