The earliest instance of a croissant we have documentation about was in Austria during the 10th century, albeit back then it was known as kipfel.

Croissants are originally from France, where they appeared in about the middle of the nineteenth century. However, they were based on the Austrian kipfel, a crescent-shaped pastry which has been documented as far back as the 13th century.

The kipfel came to France in 1838 or 1839 when August Zang opened the first Viennese bakery in Paris. French imitators soon sprang up and the French version of the kipfel (originally but no longer the same as that pastry) was named for its crescent (croissant) shape.
