Fossils are the remains or dead animals and plants whcih are preseved and modified by nature during the process of thousands of years. So they reflect the type of animal or plants some time their shape, size and position in environment i.e. fossils tells much about ecology and physiology of ancient living beings and also the reason of their extinction or death in many cases

It can be studided by analysing their matter in lab and mostcommonly by carbon dating which tells about their age

It depends on the context, but fossils ( plant, animal, or any living thing really ) can tell us about the organs and nervous system of the particular organism, sometimes we can learn about the brain activity or the social habits, even the reporductive abilities of the particular creature, or it tells us about the environment the animal ( or plant ) lived in, oxygen content, weather, all sorts of cool stuff. We can glean all kinds of neat info from a simple bone impression on a rock, its kind of incredible. I know i didnt REALLY answer that one to well, but hey, you asked a pretty vague question.
