What foods do they eat at Christmas in Ukraine?

Regionally there are differences, but what we have for Holy Supper (Christmas Eve) or on Epiphany would be the following (and I apologize for any spelling errors):

• Opalyanuk. a flat bread with honey and cloves of garlic on top
• Pickled Herring
• Pierogies (potato and cabbage)
• Capusta, a sourkraut based soup/gravy
• Kutia, a barley, honey and poppyseed concoction
• Peas
• Lima Beans
• Boiled potatoes
• A mushroom based soup/gravy

Technically, there are supposed to be 13 specific dishes (no meat), but some of them have fallen to the wayside since no one actually ate them.

As far as traditions go based on the story of Christmas, what we do is the following:

• Wash our hands with silver coins (today, it's quarters and dimes), the last person to wash their hands before eating gets to keep the money.
• You cannot eat until you see the first star .
• If anyone shows up at the door you cannot turn them away, you must let them in to have dinner.
• We set an empty plate for dinner just in case someone shows up.
• The table would traditionally have straw or hay as part of the decorations, with a candle set in a cup of barley.
• The father of the family is supposed to take a spoon full of the Kutia and throw it up to the ceiling - if it sticks, the family will have good luck. We stopped doing this one a while ago, but my grandmother's house had a bunch of kutia stains on the ceiling above my grandfather's chair.

Ukrainians prepare a twelve course meal that usually includes 'Kutia', which is prepared from cooked wheat, special syrup that contains diluted honey, grated poppy seeds, raisins, and sometimes walnuts.
