An ovary. That's it, they don't change.
The ovary is not the flower, nor does it become the flower, as someone suggested.
It is that part of the flower that contains the seeds and it becomes what botanists call the fruit.
However, people other than botanists are pretty loose about what they call fruit; a peach or banana is a true fruit, developed from an ovary. The banana has been bred to be seedless, but still to produce fruit. The wild bananas had seed and are not much good to eat.
An apple or pear is a tricky problem. It is an ovary with some stem tissue growing round it, and people have been arguing for a century or more about whether it is fruit or stem. Personally I think it is a bit of both, but suit yourself about that
but the so-called fruit of a pineapple is the inflorescence, the flowering stalk, in which what we call the fruit is really the fleshy leafy bits all swollen up with juice and soft tissue. Wild pineapples have seeds as well, but commercial pineapples have been bred to be seedless, like bananas.
The so-called strawberry "fruit" is actually another example of a fleshy, swollen inflorescence. The real fruits are the little "seeds" on the surface of the fleshy stalk; they used to be the ovaries inside the strawberry "flowers".
