Limburger cheese's pungent odor is caused by the bacteria Brevibacterium linens, which is partially responsible for body odor and particularly smelly feet. This bacteria is inoculated on the outside of the block of cheese and as it grows softens the cheese as it ages.
It's a bit like odours of moldy room, vomit, and stinky feet combined :) Fortunately, the odour is not very strong, so the cheese is quite tasty.

The best description of the smell of Limburger cheese that I know of is that it smells like an outhouse, so possibly the answer is moist animal poo. Rotting leaves also smell pretty bad (though not, to my nose, as bad as Limburger), so that's another possibility.
