Most devices have to check for new information to load from a server, like having to press send and receive in your email application to ask the server to send it any more emails. With push technology, the server contacts you and "pushes" the new emails to you as they arrive, without your computer/device having to ask if there are any new emails periodically or manually.
The same technology can be used for other applications and not just for email, but this is the common place it is spoken about (eg. Blackberry cellphones).
