What does simmering mean?
Answer when referring to cooking simmering means to all the food to heat up enough to bring to a small boil, not a full blown out one :-)
Broth is generally made by simmering meat and aromatics in water or stock. This differs from stock, which is generally made by simmering bones only with aromatics. Both has a much richer flavor and usually a higher gelatin content from the fats dispersed through the meat used in the simmering process.
There are basically two reasons for boiling (simmering) homemade pasta sauce for an hour. The longer the sauce cooks, the thicker it will be. Also, simmering for longer periods of time will allow the flavors to "marry," creating a better tasting sauce. Many recipes specify simmering pasta sauces for even longer; two hours or more.
