it is best for the pineapple to be frozen. If the pineapple is not frozen, the jello will not solidify. There is proteolytic enzyme in citrus fruits, which causes the jello to not solidify. It is best to boil the fruit or have it frozen.

Raw pineapple contains a protease enzyme that chops up the long protein molecules of the gelatin into short ones, this prevents setting.

Cooking of pineapple before adding it to gelatine destroys these protease enzymes, allowing the gelatin to properly set. Canned pineapple was cooked in the canning process.
