The Arab-Israeli Conflict existed long before 1948 and actually entered a violent stage as early as 1921. In 1948, however, Israel declared Independence which caused the internal Jewish-Arab Engagements to escalate into an international war when Arab Nations declared war on Israel.

There was no particular event which set it off. See the below circumstances.

The Israeli-Palestinian Conflict has its origins in the confrontation between immigrant Zionist Jews in the Mandate of Palestine and their interaction with the indigenous Palestinian Arabs in the 1920s and 1930s. Before that point, the Immigration into the land had been a small trickle and Arabs were not terribly concerned. However, the Jewish immigration in the 1920s was quite large and disruptive. By the mid 1930s, both sides had developed militias which they used both to attack British colonial institutions and each other.

On May 14, 1948, the last British troops pulled out of Palestine as prominent members of the future Israeli government, such as David Ben-Gurion, met in Tel Aviv to declare Israel as a brand new state. Shortly afterwards, armies from Egypt, Jordan, Syria, Lebanon, and other Arab royalist nations set out from their homelands to quash the new state. However, members of the Israeli Army were better trained than their opponents. In addition, the Arab nations' supply lines were overextended whereas Israel's were more organized and had a central command.

Up until 1948, the British had a mandate over the land of Israel. The mandate ended after the 1947 UN council vote (Resolution 181) which called for a withdrawal of British forces, and the formation of two separate states.

Shortly after the British forces withdrawal, Egypt, Iraq, Jordan, Lebanon and Syria attacked the state of Israel at the same time, setting of the 1948 war.

There were many unsolved problems when the British left. Among these were the rights of Muslim Arabs and Christian Arabs living in Jewish-controlled lands. Another issue was the odd shape of the original Jewish state, with the two major sections disjointed. No provision was made for reasonable limits for Jewish immigration from Europe, Russia, and elsewhere, nor were provisions made to protect the rights of Palestinians who found themselves displaced. Very basic religious questions were also sparked, as Jewish claims to many sites dates back almost 3,500 years. Muslim claims of ownership for 1300 continuous years and sometimes contradictory views of how to interpret Qur'an became a problem (Qur'an requires Muslims to respect and protect Jews and Christians in areas they control, but it also requires Muslims to fight without end against people who attempt to displace them from their lands). The British could not be expected to solve all of these problems before leaving, and the Israelis and Muslims and Arab Christians certainly added to the grief.

Jews also flooded back to the Holy Land following World War II, since they felt that they would always be persecuted in countries where they were the minority. In 1947, as UN Resolution 181 was being debated, a full-scale war erupted between the Jewish militias and the Arab militias. When Israel declared its independence in 1948, the Arab States joined in the War which caused it to be internationally recognized and called the Arab-Israeli War of 1948-9.
