Why do hydraulic systems usually have large mechanical advantages?
Two interconnected hydraulic cylinders can seen as a lever, the smaller cylinder is the end of the lever further away from the fulcrum (where you will apply the force), the larger piston is the load end. Add to that another lever (a brake pedal), you again increase your mechanical advantage. So, at least one of the reasons why hydraulic systems have large mechanical advantages is they combine multiple simple machine concepts to multiply force and torque.
Is a bicycle a pulley?
If you are refering to the drive-train, then no, it is not a belt and pulley system. It is a gear and chain drive though the two systems are virtually identical, with both making use of mechanical advantage to deliver more usable power. The maths behind the two systems are essentially the same bar the fact that the belts on a pulley can slip and stretch and unless the belt is toothed you cannot use the number of teeth on the sprockets/gears to determine gear ratio.

Real early bicycles didn't have pedals, and you'd have to kick your way forward. No mechanical advantage at all. Slightly later bikes had pedals fixed to the wheel, which offered some sort of mechanical advantage through the circumference of the wheel and the length of the crank arms. Then came the chain driven bikes which are fairly similar to the modern bicycle. However, with the gearing systems available today, bikes have very adjustable mechanical advantages. from far less than the early bikes to considerably more than the early bikes.
