The ancient Roman soldier had to first of all be obedient. He had to learn to follow orders. Period. He also had to have the stamina to carry out his various assignments, many times without sleep. He had to learn to march and fight in unison with his fellows. He had to be meticulous in cleaning his armor and weapons in order to prevent rust and had to learn to do his laundry and cooking when on the march. But most important of all, he had to be loyal to his military oath.
One of the reasons why the Roman army was so successful was because they only chose the best men. The type of men that the Roman army selected had to be fit. They had to have long fingers and a letter of recommendation. This helped the Roman army as most of the men were the best of the best.

To be accepted into the Roman army itself a man had to be at least 18 years of age although they actually preferred men in their early twenties who had attained their adult stature and were beginning to fill out. They had to be freeborn and Roman citizens. They had to be physically and mentally sound. To be accepted into an auxiliary corps the man had to meet the standards of the country that recruited him, as the auxillaries were enlisted from the provinces or from the client kings.
The military age was 17 to 46. The above picture started with the Marian reforms of 107 BC which created a professional army, lifted property qualifications, and got the state to pay for the soldiers' arms and equipment. Prior to this, the army was a citizen militia. You had to buy your arms and equipment and had to meet a property qualification threshold which was aimed at ensuring that you could afford this expense.
You had to be physically fit, 18 years old (but they weren't always that age because the Romans were more concerned about height) and 1.6 cm tall. Oh and you had to be a male.
