Tennessee isn't known for any particular dish that is "just theirs" (like Philly have cheesesteaks, Hawaii having Poi, etc.) Tennessee is pretty well known for their BBQ--especially the Memphis area with their "Memphis Style BBQ"--in which the meat is coated in a dry rub of assorted seasonings and spices and then either smoked or grilled. Their BBQ Sauce is traditionally made with a tomato base (a red sauce) and has vinegar, as well as other seasonings. It can also be sweet. Aside from their BBQ, Tennessee tends to adhere to traditional southern menus: fried fish, hushpuppies, cornbread, sweet tea, grits, fresh vegetables, potatoes, gravies, etc. Sweet tea is also quite popular there, as in the South.
