First, potatoes grow very well in Ireland, so a lot can be grown and used. Then, the potato is very versatile. It can be cooked and served in many ways like boiled, roasted, mashed, fried etc. It goes with a wide range of other foods. With such a widely available food being able to be served in so many ways, they are going to be used a lot. That is why they are so popular in Ireland.
