Once food is chewed and swallowed, it is called bolus instead of food. It travels down the esophagus and into the stomach, where hydrochloric acid and pepsin are produced, which denature (unravel) proteins. This acidic substance is now called chyme and travels to the small intestine where the pH is neutralized and the nutrients are absorbed.
