The water forces air out from the soil, and the cells of the root hairs get damaged and will eventually die due to the lack of oxygen. At this point, the plant becomes unable to pick up water, wilts and dies. The symptoms are confusing, because at first glance, the plant reacts the same way to the lack of water as to overwatering.
